The Glory of Ghee

I also love that there is the perfect time of year to consume more of it! (It's now!)
When the weather gets cold and the winds dry out the Earth, ghee is the perfect medicine because it is warming and hydrating. It helps calm the nervous system (decrease anxiety and overwhelm) and tastes so good!
What is ghee?
Ghee is a clarified butter used in Ayurvedic cooking. The milk solids (which are the part of butter that gunks up your system) have been removed through boiling the butter to make ghee. This creates a pure fat that is high in butyric acid, which is extremely healing for the gut lining and supportive of the immune system.
Here are some more fabulous facts about ghee:

Ghee has a high smoke point which means it is great for cooking and sautéing.

Ghee doesn’t not spoil easily and can be left out at room temperature. It does not need to be refrigerated as long as no water gets into it.

Ghee does not trigger dairy allergies since the milk solids and impurities have been removed and it is lactose and casein free.

Ghee is rich in oil soluble vitamins A and E and also K2.

Ghee benefits the digestive, nervous, and immune systems.

Ghee is great to use in oatmeal, baking, spread it on toast, sauté veggies in it or put a spoonful in the pot when you cook rice or quinoa.
